Butternut Squash – a wonderful fruit!

Butternut squash is a very healthy fruit; it is a great source of fibre, vitamin A, vitamin C, magnesium and potassium

Not only that but it tastes absolutely gorgeous roasted!

(One of my favourites)

Try it chopped into chunks with a cod / salmon fillet and plenty of other roasted veggies as an alternative to roast potatoes

Or try roast chicken with butternut squash boiled and mashed with tons of veg – cabbage, carrots, broccoli, cauliflower and peas as an alternative to mash

Or chop into chucks, drizzle with olive oil, sprinkle with black pepper and roast in the oven.

A great alternative to potato wedges and MUCH HEALTHIER!

Roasted butternut squash:

  • Peel the squash & chop off the stalk & flower end
  • Chop in half lengthways & scoop out the seeds
  • Brush the surfaces of the squash with a little olive oil
  • Bake in oven at 180 degrees for up to 25-30 minutes or until it is soft (but not too soft & soggy) or chop into chunks and bake for 20-25mins

    For a delicious variation stuff the seed area with one of the following mixes:

    • Chopped onion, garlic & thyme
    • Sweetcorn & chilli
    • Crushed pine nuts & sage
    • Chopped dried apricots, raisins, grated apple & ground almonds

    I have also just discovered that Tesco do packs of pre-chopped & peeled butternut squash if you are in a rush

    Very convenient & yummy!
